Moroccan Rfissa

Rfissa also called Marchouch or Marshosh in some places is a very famous dish in Morocco, and enjoyed by people of all ages. There are two steps in making Rfissa, first step is to make it's bread, and the second step is to cook the chicken and the other ingredients coming with it.

Preparation:

First you need to cook the bread. Put the flower in a container, add salt and water little by little, mix until you get a paste like substance. Make mid size balls with it. Wet your hands with oil and take each ball, make it flat, until it takes a rectangular shape as thin as a sheet of paper. Cook it in a frying pan, just before it gets a brownish tan remove it, and put another rectangular shaped paste in the pan. Once all of them are cooked cut then into food pieces.

Now cooking chichen, wash the chicken very well, put it in a cooking pot, add some slices of onion, salt, pepper, safran, oil, salted butter, and 6 cups of water. Cook for one hour, at the end of the hour add lentiles, broad beans, fenugreek.Put back the top of the cooking pot, and leave it cooking, add water when necessary, when the chicken is cooked, turn the stove off.

Serving:

Heat up the pieces of bread you made the first time, cut them into small pieces, put them in a serving plate, add the broth and chicken on the top of them, and enjoy!
