Moroccan Amlou

Amlou is a spread used on bread or melba toasts. It is glossy with grilled almonds, argan oil and natural honey. Its is a famous aphrodisiac tonic and can be eaten at breakfast time or served after a meal. Amlou is traditionally used by certain Berber tribes of Morocco for pastry making. It was consumed by the nomads who crossed the desert. Amlou was traditionally kept in the bedroom of those who could afford it as it was considered an aphrodisiac. It was also a typical wedding gift for the new couple.

Preparation:

In a blender, mix pulse the almonds with the walnut oil and salt. When smooth, spoon in honey and blend for 30 seconds. Keep in an airtight container. Use to spread on breads.
